Delphi is set in an outstanding location within 400 acres of forest beneath the 12 Bens mountains and a short drive from Cross Beach (one of Ireland’s best surfing beaches), Delphi Mountain Resort started as a dream outdoors and adventure project for Rory and Aileen . Today, it has metamorphosed into something much more sophisticated, offering plush rooms, elegant suites, a gastronomic restaurant and a great spa. Built of natural stone and wood so that it blends into its surroundings, Delphi strives towards a low-impact, sustainable existence at every level. The 10 million euro development included the addition of an on-site water treatment facility, and now all of its water comes from the mountain springs above.
The spa, which features a hydro pool and thermal suite with mountain views, uses only products that have been hand-harvested and certified organic – the seaweed in its seaweed baths, for instance, has been gathered off the shores of Connemara and dried and packaged on site. The restaurant features dishes that are locally sourced wherever possible and focuses on the healing qualities of certain ingredients.
